To take a photograph of a person or even a group is what I like most.
Not the poses you find all over social media, but these scenes where the person, or even the group is unaware that a camera is pointing on them. No frantic "keeping the eyes open" or getting the head turned into the right pose - an unexpected shot will always show all the angles right.
